I wanna learn how to spit roast. I've made a fire tub out of an old laundry tub and I have bolted on the spit roast turnstile so ready to go. What I'd like to know is what is the best charcoal to use, most economical place to buy it. Also tips and tricks of a good spit roast. What is the best cut of meat to spit roast etc. Do you need a cover? Don't think I'm ready for a full pig or lamb but where to start?

Low and slow as bluey said,

Try to get the temp around the 100-120deg and cook for about 4-5+hrs depending on the size and cut. I usually do a 2-2.5kg leg of lamb for about 6-8hrs at 120 on the BBQ spit. with a tray of water underneath it. Also have the flame away from the meat not directly below.

You can also buy some Hickory Smoke in a bottle from some IGA's which you can pour over the coals for a nicer flavour meat

Ive been using Mangrove charcoal lately. Ive tried a few different types and feel its the best Ive used so far. Ive also heard good things about the reconstituted Redheads charcoal as well.
Just stay away from the cheap heatbeads.

That looks great. I'm getting hungry. Where is the rakia? I bought a bag of charcoal from the local hardware shop today. 4kg for $12!!!!!. That aint economical. And that is Indonesian charcoal. Tried doing some some pork spare ribs. Not too bad, they retained the moisture.

I like where this is going. Might make one myself to compliment the UDS.
Can't ever have enough meat cooking devices at your disposal.
