Your original question was not about whether it is worth employing someone, but "what steps need to be taken to legally employ someone for a day or two "...
Legally - as opposed to paying a mate cash which you were not interested in.
    I mentioned a few things.

Whether it is more hassle or now does depend.
When I was in the game in a drought stricken regional area, the peak season was very short - perhaps two months - three at most.
When that was over many went back to their 'real' jobs and I picked up their clients, which kept me going well enough until next peak.
I then employed two so as to service those clients during spring. Once Peak season was over, I'd let the casuals go.

I didnt make money on casuals - but that was never the goal - it was to retain the client base during a period I could not service them myself.
In my area, profitability was not about maximizing income in spring, but in evening out the drop in income during autumn/winter - but your circumstances may be different.

I am going through this dilemma at the moment not because I'm busy but because I need help as my body is breaking down quickly and badly.

Find a good bloke at a footy club or uni student.

That seems to be the best bet.

Anyone doing a pre-apprenticeship or working at Maccas seems to be useless.

Anyone requiring cash only will end up biting you.

I've been offered a good young worker with great reference who's willing to work part time for me.
I'm looking at putting someone on part time soon so just throwing it out there to see if it's worth the hassle.
I have allot more regular commercial work coming on board soon but can't fit it in.
Using other sub contractors is a no go because they too
    Are flat out.

Just to add, this guy has been a farm hand getting into his work from as early as 5am every day and is a hard honest worker so should be good. He already knows how to whipper snip good too.
I've used footballers in the past but they don't last all day.
    Must be the bad footballers

I have a few guys working for me.
    - Means that I don't have to work as hard physically,
    - I can take a day off or more and let them do the regular jobs
    - but it means more admin work, payroll, super etc.
    - it will cost for insurance, workers comp, possibly more repairs for equipment
    - part timers get sick leave, annual leave and public hols, Pay for rainy days
    - casuals get a higher rate pay to compensate for this
It suits some to employ but not all

yeah definitely casual is the way to go, I usually go by this award "Gardening and Landscaping Services Award 2010" which is the closest to our industry.

Employ through a recruitment agency, just get him to sign up, they take care of everything.
